Makes 2 servings


2 slices crusty whole grain bread

1 ripe avocado, halved, pit removed

Extra-virgin olive oil
Flaky salt and coarsely ground black pepper

2 eggs for poaching or frying

Fresh herbs, thinly sliced chilis, thinly sliced radishes, chili flakes



Toast the bread to your liking and drizzle lightly with olive oil, then sprinkle with coarse salt. Use a spoon to remove the avocado halves from the peel, keeping them in large pieces.

When the toast has cooled slightly, put one half of the avocado on each piece of toast. Use a fork to mash the avocado into the bread, leaving some larger chunks.

Prepare an egg for each piece of toast.

Sprinkle the avocado with a bit more salt and some pepper. Squeeze the lemon over the top and add the egg. Scatter the herbs, chilis or any other garnishes desired and serve immediately.

Pair with a glass of crisp, citrusy Dark Horse Sauvignon Blanc.
